Lamb and date tagine

This North African dish mixes sweet dried dates into a spicy lamb stew – delicious served with rice.

700g lamb leg steak, chopped into bite-size chunks

1 tsp ground coriander

1 tsp ground cumin

1 tsp ground cinnamon

½ tsp chilli powder

½ tsp turmeric

20g fresh ginger, peeled and grated

4 cloves garlic, crushed

2 tbsp extra virgin olive oil

2 onions, roughly chopped

1 x 400g can chopped tomatoes

600ml hot chicken stock

200g dried, ready-to-eat, pitted dates

Grated zest and juice of 1 lemon (optional)

Cooked rice and green vegetables, to serve
